  • 24 cherry tomatoes, blanched, or 4 tomatoes, sliced (see note)
  • 1/2 cup (125 ml) water
  • 1/2 cup (125 ml) white wine vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 thyme sprig
  • 1 bay leaf

Инструкция

  1. Place the tomatoes in a 2-cup (500 ml) glass jar.
  2. In a small pot, bring the remaining ingredients to a boil. Simmer for 5 minutes. Strain the hot liquid through a sieve and let cool.
  3. Pour the liquid over the tomatoes. Cover and let macerate for 12 hours in the refrigerator. The marinated tomatoes are delicious in a sandwich or salad.
