Cranberry Lime Bars

- 1 1/2 cups (225 g) unbleached all-purpose flour

- 1/2 cup (115 g) unsalted butter, softened
- 1/3 cup (70 g) sugar
- 1/2 tsp (2.5 ml) vanilla
- 1 egg
- 1/4 cup (40 g) dried cranberries, coarsely chopped
- 1/2 cup (105 g) sugar
- 1/4 cup (55 g) unsalted butter, melted
- 4 eggs
- 2 limes, zests finely grated
- 1/2 cup (125 ml) lime juice
- 1/4 cup (60 ml) 35% cream

- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a 11 x 8-inch (28 x 20 cm) rectangular cake pan with parchment paper, letting it hang over 2 sides.
- In a bowl, combine the flour and salt.
- In another bowl, cream the butter with the sugar and vanilla with an electric mixer on medium speed until light and fluffy. Add the egg and beat until smooth. Using a wooden spoon, stir in the dry ingredients and the cranberries. Press into the bottom of the pan.
- Bake for 25 minutes or until the crust is lightly golden.
