Yellow Bell Pepper Soup
Ingredients
- 3 tablespoons (45 ml) olive oil
- 1 teaspoon (5 ml) smoked paprika
- 4 large yellow bell peppers, halved and cored
- 1 small onion, chopped
- 1 tablespoon (15 ml) olive oil
- 5 cups (1.25 litres) chicken broth
- 3 potatoes, peeled and cut into cubes
- Salt and pepper
Instructions
- In a saucepan over medium-low heat, slowly heat
- the oil until warm but not burning hot. Add the paprika, stir and remove from the heat. Set aside.
