Ингредиенты

  • 1 cup (250 ml) fresh cilantro
  • 2 cloves garlic
  • 1/4 cup (60 ml) whole pistachio
  • 1/3 cup (75 ml) fresh Parmesan cheese, grated
  • Zest and juice of 1/2 lime
  • 3/4 cup (180 ml) olive oil
  • Salt and pepper
  • 1 1/2 lb (675 g) bluefin tuna, cut into 1-inch (2.5-cm) cubes
  • 2 red bell peppers, cut into 1-inch (2.5-cm) cubes
  • Fresh cilantro, for garnish 

  • Chopped pistachios, for garnish 

  • 8 wooden skewers, soaked in water for 30 minutes

  1. In a food processor, finely chop the cilantro, garlic, pistachios, Parmesan, and lime zest. Add the lime juice. Slowly drizzle in the oil. Season with salt and pepper.
