  • 1 cup (250 ml) plain yogurt
  • ¼ tsp salt
  • 1/8 tsp ground coriander
  • 1/8 tsp ground black pepper
  • 1/8 tsp ground cumin
  • 1/8 tsp ground sumac (see note)
  • 3 pita breads, each 8 inches (20 cm) in diameter
  • ¾ lb (340 g) lean ground beef
  • 1 small onion, finely chopped
  • ⅓ cup (15 g) parsley, finely chopped
  • 2 tsp breadcrumbs
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp lemon zest, finely grated
  • 2 tbsp (30 ml) olive oil
