Rum Marinated Chicken with Peach Ketchup

- 2 peaches, unpeeled and diced
- 1 tomato, diced
- 1 onion, chopped
- 2/3 cup (150 ml) sugar
- 2/3 cup (150 ml) white wine vinegar
- 1 teaspoon (5 ml) ground ginger
- 1 teaspoon (5 ml) mustard seeds, crushed
- 1/4 cup (60 ml) dark rum
- 1 tablespoons (15 ml) honey
- 1 tablespoon (15 ml) chopped fresh ginger
- 2 cloves garlic, finely chopped
- 1 teaspoon (5 ml) chopped fresh thyme
- 1/2 teaspoon (2.5 ml) salt
- 4 skinless, boneless chicken breasts
- 3 tablespoons (45 ml) olive oil
- 2 ripe peaches, halved and pitted
- 2 zucchini, cut into 1/4-inch (1/2-cm) slices

- In a saucepan, combine all the ingredients. Bring to a boil and simmer over medium heat for about 45 minutes, stirring frequently. Cool. Cover and refrigerate for 12 hours.
