Tuna Croquettes with Marinara Sauce

- 2 cloves garlic, finely chopped
- 2 tablespoons (30 ml) olive oil
- 19 oz (540 ml) crushed tomatoes with purée
- 2 tablespoons (30 ml) chopped fresh basil
- Salt and pepper
- 1 can 19 oz (540 ml) white beans, rinsed and drained
- 1 egg
- 3 cans 6 oz (170 g) tuna, drained and flaked
- 1 1/2 cups (375 ml) breadcrumbs
- 1/3 cup (75 ml) chopped fresh chives
- 3 tablespoons (45 ml) olive oil

- In a food processor, purée the beans and egg until smooth. Transfer to a bowl and add the tuna, 125 ml (1/2 cup) of breadcrumbs and the chives. Stir to combine. Adjust the seasoning.
- Place the remaining breadcrumbs in a shallow bowl. Set aside.
- Shape the tuna mixture into 12 patties with about 60 ml (1/4 cup) each. Coat with the breadcrumbs.
- In a large non-stick skillet, brown the patties in the oil for about 3 minutes per side.
- Serve with marinara sauce and a green vegetable.
