Preserving chicken means you’ve got a guaranteed meal ready-to-go at a moment’s notice—no need to think about defrosting or cooking time. Keeping the recipe as simple as possible, we used just a handful of spices and some broth to add flavour. We love this chicken chopped and served in a salad of market-fresh vegetables.

Spaghetti Sauce
You’d never know there are over 10 cups of veggies hiding in this recipe. Finely chopped in the food processor, the vegetables are mixed with sausage meat and fresh tomatoes (or canned, depending on the season). This is our ideal ratio of ingredients, but feel free to play around with the veggies you have on hand.

Canned Carrots
We chose mixed colour carrots for this recipe, but you can use any variety you have in the garden or at your local market. We’ve preserved them in their most natural state for versatility’s sake. They’re delicious warm or cold, glazed with honey or chopped and tossed into a couscous.

Pears in Syrup
Pear season is fleeting but you can extend it forever by sealing the fruit in a jar filled with sweet syrup (the sugar preserves the fruits’ shape and flavour). We can’t stop thinking about these softened pears on crepes or waffles.
