Vegan Cashew Ranch Dip
Ingredients
- 1 1/2 cups (195 g) unsalted roasted cashews
- 1/2 cup (125 ml) water, plus more for soaking
- 1 tbsp (15 ml) apple cider vinegar
- 3 tbsp nutritional yeast flakes
- 2 tbsp dill, finely chopped
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp dried tarragon
- 1/2 cup (125 ml) olive oil
- 3 tbsp dill
Instructions
- Place the cashews in a small pot. Add just enough water to completely cover the nuts. Bring to a boil. Remove from the heat and let soak for 20 minutes. Drain and rinse.
- Place the soaked cashews, water and vinegar in a blender. Purée until smooth. Add more water to adjust the consistency as needed. Add the remaining ingredients. Season with salt and mix well.
- Place the dip in a serving bowl or shallow dish, making decorative waves in the surface with a spoon. Cover and refrigerate until ready to serve (see note).
