Rösti with Apple Salad
Served with applesauce and apple slaw, this recipe for crunchy rösti is an absolute delight. At the heart of this gourmet dish inspired by Swiss cuisine are potatoes and apples, two products proudly grown right here in Quebec. In collaboration with Aliments du Québec, take Sunday brunch up a notch.
Ingredients
- 4 Empire or Spartan apples, unpeeled, cored and chopped
- 1 tbsp (15 ml) honey
- 2.2 lb (1 kg) russet potatoes, peeled
- 2 shallots, thinly sliced
- 1/4 tsp ground nutmeg (optional)
- 3 tbsp butter
- 1 Empire or Spartan apple, unpeeled, cored and julienned
- 3 tbsp flat-leaf parsley leaves
- 2 tbsp chives, finely chopped
- 2 tsp (10 ml) apple cider vinegar
- 5-year aged cheddar cheese shavings, to taste
- 1/2 cup (125 ml) sour cream
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C).
- Spread the apples out in a large baking dish. Bake for 20 minutes. Remove the baking dish from the oven. Add the honey. Season with salt and pepper. Mix well. Continue to bake for 5 minutes or until the apples are tender.
- In a food processor or blender, purée the apples until smooth. Strain through a sieve placed over a bowl, pressing down with the back of a ladle. Compost the residue. Set the compote aside.
