Grilled Vegetable and Cheese Skewers
Welcome to barbecue season! Tie your apron strings and grab your basting brush because we’ve got a great grilled skewer recipe to share with you!
Ingredients
- 2 bell peppers, various colours, seeded and cubed
- 3/4 lb (340 g) halloumi-style grilling cheese, cubed
- 1/2 lb (225 g) whole white mushrooms
- 2 tbsp (30 ml) olive oil
- 2 tsp (10 ml) balsamic vinegar
- 1/2 tsp dried oregano
Instructions
- Preheat the grill, setting the burners to medium-high. Oil the grate.
- In a bowl, combine all of the ingredients. Season with salt and pepper.
- Thread the vegetables, alternating varieties, onto metal or wood skewers (which have been soaked in water for 30 minutes). Thread the cheese onto other skewers. Set aside on a large plate.
- Grill the vegetable skewers for 10 minutes, turning them over a few times during cooking using kitchen tongs. Place on another plate. Oil the grate again.
- Grill the cheese skewers on both sides, turning them over as soon as the cheese is grilled, about 1 minute per side.
- Serve immediately with pita bread, if desired.
