Crackers with Aged Cheddar and Date-Lemon Purée
Ingredients
- 2/3 cup (150 ml) water
- 5 oz (140 g) dates, pitted and chopped
- 1 tsp (5 ml) lemon juice
- 5 oz (140 g) sharp cheddar cheese, sliced
- 12 plain crackers (Melba Toast-style)
Instructions
- In a small pot, bring the water and dates to a boil. Simmer over medium heat until all of the water is absorbed, stirring a few times. Add the lemon juice. Mash the dates into a purée using a fork. Season with pepper. Let cool for 30 minutes.
- Spread the date mixture over the crackers. Garnish with a slice of cheddar and season with pepper. The date purée will keep for 1 week in an airtight container in the refrigerator.
