Cilantro Chutney

Ingredients

  • 2 cups (70 g) cilantro leaves and stems
  • 1 cup (35 g) flat-leaf parsley leaves and stems
  • 1 cup (35 g) mint leaves and stems
  • 2 green onions, coarsely chopped
  • 1 garlic clove, peeled
  • 1/4 cup (60 ml) water
  • 2 tbsp (30 ml) lime juice
  • 1 tbsp (15 ml) white wine vinegar
  • 1 tsp chopped ginger
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/8 tsp ground cumin

Instructions

  1. In a blender or food processor, coarsely purée all the ingredients.
  2. Transfer to a bowl. Serve, or cover and refrigerate. The chutney will keep for 1 week in the refrigerator.
