Cantaloupe Salsa
Ingredients
- 1 1/2 cups (285 g) cantaloupe, seeded and cut into small dice
- 2 tomatoes, seeded and cut into small dice
- 2 cups (320 g) cucumber, cut into small dice
- 1/2 red onion, finely chopped
- 1/4 cup (60 ml) fresh cilantro, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- 2 tbsp (30 ml) lime juice
Instructions
- In a bowl, combine all the ingredients. Season with salt and pepper. Refrigerate until ready to serve.
- Serve the same day with corn chips.
