Tuna Skewers with Cilantro and Pistachio Pesto
Ingredients
- 1 cup (250 ml) fresh cilantro
- 2 cloves garlic
- 1/4 cup (60 ml) whole pistachio
- 1/3 cup (75 ml) fresh Parmesan cheese, grated
- Zest and juice of 1/2 lime
- 3/4 cup (180 ml) olive oil
- Salt and pepper
- 1 1/2 lb (675 g) bluefin tuna, cut into 1-inch (2.5-cm) cubes
- 2 red bell peppers, cut into 1-inch (2.5-cm) cubes
- Fresh cilantro, for garnish
- Chopped pistachios, for garnish
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- In a food processor, finely chop the cilantro, garlic, pistachios, Parmesan, and lime zest. Add the lime juice. Slowly drizzle in the oil. Season with salt and pepper.
