Tofu Souvlaki Skewers
Ingredients
- 1 ¼ lb (675 g) firm tofu, cut into large dice
- ¼ cup (60 ml) lemon juice
- 2 tbsp (30 ml) vegetable oil
- 2 garlic cloves, finely chopped
- 1 tbsp dried oregano
- ¼ tsp red pepper flakes
- 12 mini or 1 large pepper, seeded and cut into large dice
- 2 small red onions, quartered
- 1 cup (250 ml) sour cream
- 1 garlic clove, finely chopped
- 4 tsp (20 ml) lemon juice
- 4 Lebanese cucumbers, thinly sliced
- 2 tbsp (30 ml) vegetable oil
- ½ tsp dried oregano
- 4 pita breads
Instructions
- In a glass dish or in a large sealable bag, combine the tofu, lemon juice, vegetable oil, garlic, oregano and red pepper flakes. Season with salt and pepper. Marinate for 15 minutes. Drain the tofu and reserve the marinade.
- Preheat the grill, setting the burners to high. Oil the grate.
- Thread the tofu, peppers and onions onto skewers.
- Grill the brochettes for 6 to 8 minutes, or until the tofu and the vegetables are well grilled, turning them occasionally. Set aside on a plate and brush with the reserved marinade.
