Steak and Sweet Potato Fries
Steak frites, that beloved bistro classic, gets a sweet twist—a sweet potato spiral twist, that is. Add a dollop of curry mayo and a well-seared hanger steak and we’re hangry no more.
Ingredients
- 1/2 cup (125 ml) mayonnaise
- 4 tsp (20 ml) prepared mustard
- 1/2 tsp curry powder
- 3 sweet potatoes, peeled and cut into large spirals or sticks 1/4 inch (5 mm) thick
- 1/2 cup (100 g) potato starch
- Vegetable oil, for frying
- 3 tbsp pine nuts
- 1 tbsp sesame seeds
- 3 tbsp (45 ml) olive oil
- 1 tsp ground turmeric
- 1 1/2 lb (675 g) beef flap or hanger steak, cut into 4 pieces
Instructions
- In a bowl, combine all of the ingredients and set aside.
