Spicy Trout Confit

This homemade trout confit is delicious served hot or cold in a salad or sandwich.

Ingredients

  • 1 1⁄2 lb (675 g) trout fillet with skin, scaled and deboned
  • 4 tsp Montreal steak spice, homemade or store-bought
  • 3 tbsp (45 ml) olive oil

Instructions

  1. With the rack in the middle position, preheat the oven to 250°F (120°C). Line a baking sheet or a baking dish with parchment paper.
  2. Place the trout on the baking sheet skin-side down. Rub the flesh-side with the steak spice. Drizzle with the oil.
  3. Bake for 20 minutes or until the fish flakes apart with a fork.
  4. Delicious served hot or cold in a salad or sandwich.
