Spicy Shrimp with Mint
Ingredients
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 3 tbsp (45 ml) olive oil
- 2 cups (500 ml) tomato sauce or crushed plum tomatoes
- 1/4 cup (60 ml) 35% heavy cream
- 1/4 cup (60 ml) balsamic vinegar
- 3 tbsp (45 ml) olive oil
- 2 cloves garlic, chopped
- 1 tsp crushed red pepper flakes
- 1 1/2 lb (675 g) large shrimp with or without the tail, peeled and deveined
- 20 wooden skewers, soaked in water for 30 minutes, or metal skewers
- 1 tbsp chopped fresh mint
- Salt and pepper
Instructions
- In a saucepan over medium-high heat, brown the onion
- and garlic in the oil. Season with salt and pepper. Add the tomato sauce or the tomatoes. Bring to a boil, then simmer gently for about 10 minutes. Add the cream and adjust the seasoning. Set aside and keep warm.
