Smoked Paprika and Grilled Vegetable Burgers

Ingredients

  • 1/2 cup (125 ml) sour cream
  • 4 Kaiser rolls
  • 1 large zucchini, cut into 1/4-inch (1/2-cm) slices
  • 4 large 1/2-inch (1-cm) thick eggplant slices
  • Salt and pepper 

  • 2 tablespoons (30 ml) olive oil
  • 4 teaspoons (20 ml) Dijon mustard
  • 1 egg 

  • 1 tablespoon (15 ml) chili powder
  • 1 tablespoon (15 ml) smoked paprika (see note)
  • 1 lb (454 g) ground beef or lamb
  • 2 tablespoons (30 ml) chopped fresh cilantro
  • 1/2 cup (125 ml) store-bought Baba Ghanoush (see note)

Instructions

  1. Preheat the grill, setting the burners to high.
  2. Lightly oil the grate.
  3. In a bowl, combine the meat, paprika, mustard and egg. Season with salt and pepper. Shape into 4 patties.
  4. Lightly oil the vegetables. Season with salt and pepper.
  5. Cook the patties on the grill for 4 to 5 minutes per side or until the meat is thoroughly cooked. Cook the vegetables on the grill for 2 to 3 minutes per side or until just tender. Toast the bread.
  6. Meanwhile, in a bowl, combine the sour cream and cilantro. Season with salt and pepper.
  7. Generously spread sour cream and Baba Ghanoush on the bread. Add a meat patty.
  8. Garnish with slices of grilled eggplant and zucchini.
