Smoked Meat Pizza on the Grill

Ingredients

  • 1 cup + 2 tbsp (170 g) unbleached all-purpose flour
  • 2 tsp sugar
  • ½ tsp instant yeast
  • ½ tsp salt
  • ½ cup (125 ml) warm water
  • ½ white onion, thinly sliced
  • 1/3 cup (75 ml) crème fraîche
  • 1 tbsp (15 ml) prepared mustard, plus more for serving
  • 1 package (200 g) smoked meat, torn into pieces
  • ¼ cup (35 g) gherkins, cut into rounds

Instructions

  1. In a large bowl using a wooden spoon, or in a stand mixer fitted with the dough hook, combine the flour, sugar, yeast and salt. Add the water and mix until a soft ball of dough forms. Knead for 5 minutes on a floured work surface or in the stand mixer until smooth.
  2. Form the dough into a ball and place in a clean, lightly oiled bowl. Cover with a damp dishcloth and let rest in a warm, humid spot for at least 1 hour (ideally 2 hours) or until the dough has doubled in volume.
