Sesame and Honey Marinated Tofu Skewers
Ingredients
- 1/4 cup (60 ml) honey
- 1/4 cup (60 ml) soy sauce
- 2 tbsp (30 ml) toasted sesame oil
- 2 tbsp (30 ml) rice vinegar
- 1 tsp (5 ml) sambal oelek
- 3/4 lb (350 g) firm tofu, cut into 24 approximately 1-inch (2.5 cm) cubes
- 24 small white mushrooms
- 2 yellow bell peppers, seeded and each cut into 12 cubes
- 1 green zucchini, cut into 24 half-rounds
- 1 green onion, thinly sliced
- 1 tbsp chopped cilantro
- 8 small (or 4 long) wooden skewers, soaked in water for 30 minutes, or metal skewers
- Pepper
Instructions
- In a dish or a large sealable plastic bag, combine all the ingredients. Add the tofu, mushrooms, bell peppers and zucchini and toss to coat with the marinade. Cover the dish or seal the bag and refrigerate for 4 hours, or overnight.
