Sausage, White Bean and Kale Casserole

- 3/4 lb (340 g) mild Italian sausages, casings removed
- 1/4 cup (60 ml) olive oil
- 2 garlic cloves, chopped
- 2 tbsp unbleached all-purpose flour
- 2 1/2 cups (625 ml) chicken broth
- 2 cans (19 oz/540 ml each) white beans, rinsed and drained
- 2 tbsp (30 ml) whole-grain mustard
- 1 tsp ground fennel seeds
- 1/4 tsp red pepper flakes
- 6 cups (180 g) kale, stems removed, leaves chopped
- 1/2 cup (40 g) panko breadcrumbs
- 1/2 cup (35 g) fresh Parmesan cheese, grated
- 2 tbsp chives, finely chopped

- In a large non-stick skillet over medium-high heat, brown the sausage meat in half (2 tbsp/30 ml) of the oil, breaking it up with a wooden spoon. Add the garlic and cook for 1 minute while stirring.
- Sprinkle the flour over the meat and continue to cook for 1 minute while stirring. Add the broth, beans, mustard and spices. Mix well. Bring to a boil. Simmer for 5 minutes or until the sauce thickens slightly. Season with salt and pepper. Add the kale and stir just until wilted. Adjust the seasoning.
- Meanwhile, in a small skillet, brown the breadcrumbs in the remaining oil. Transfer to a bowl. Add the Parmesan and chives. Season with pepper and mix well.
- Serve the sausage and bean mixture in shallow bowls. Sprinkle with the breadcrumb mixture. Serve immediately.
