Sausage and Arugula Salad

Ingredients

  • 4 Italian sausages, spicy or mild
  • 5 oz (142 g) arugula (1.5 litres/6 cups)
  • 1 avocado, diced
  • 2 green onions, chopped
  • 2 tablespoons (30 ml) olive oil
  • ½ lemon, the juice only
  • 1/4 cup (60 ml) unsalted roasted peanuts, crushed
  • 4 fresh apricots, pitted and quartered or 8 dried apricots, finely chopped
  • 1/4 cup (60 ml) grated Parmigiano-Reggiano cheese
  • Salt and pepper

Instructions

  1. Preheat the grill, setting burners to medium. Oil grate.
  2. Grill sausages until cooked through. Let cool. Cut into slices.
  3. In a large bowl, toss arugula, avocado, green onions, oil and lemon juice. Season with salt and pepper.
  4. Serve garnished with sausage. Sprinkle with peanuts, apricots and cheese.
