Pasta Salad with Grilled Vegetables and Tomato Dressing
Ingredients
- 1 very ripe tomato, chopped or 1 cup (140 g) very ripe cherry tomatoes
- 1 garlic clove, thinly sliced
- ¼ cup (60 ml) olive oil
- 2 tbsp (30 ml) balsamic vinegar
- ¾ lb (340 g) whole wheat penne or other short pasta
- 2 bell peppers, various colours, quartered and seeded
- 2 green zucchini, cut into long slices ¼ inch (5 mm) thick
- 2 tbsp (30 ml) olive oil
- 2 cups (280 g) cherry tomatoes, various colours, halved
- ¼ cup (10 g) mixed fresh herbs, finely chopped (such as parsley, chives, basil)
Instructions
- In a personal blender, finely chop the tomato and garlic. Add the oil and vinegar. Season with salt and pepper. Blend until smooth. Strain through a sieve, if desired.
