Minestrone Salad

This salad is a fun take on the classic Italian soup. It features all the usual ingredients – pasta, green beans, carrots, celery – with a tangy and herby dressing. It’s super easy to prepare and makes for tasty and healthful lunches, and it’s great to bring to a potluck.

Ingredients

  • 3 cups (300 g) pasta shells
  • 1 ¼ cups (150 g) green beans, cut into pieces
  • 2 carrots, halved lengthwise and thinly sliced
  • 2 celery stalks, thinly sliced
  • 3 green onions, finely chopped
  • 1 garlic clove, finely chopped
  • 1 can (19 oz/540 ml) red beans, rinsed and drained
  • 1/4 cup (60 ml) olive oil
  • 2 tbsp (30 ml) balsamic vinegar
  • 2 tbsp basil leaves, finely chopped
  • 1/2 tsp (2.5 ml) Dijon mustard

Instructions

  1. In a large pot of salted boiling water, cook the pasta until very al dente. Add the green beans and carrots. Continue to cook for 2 minutes or until the vegetables and pasta are al dente. Drain and rinse under cold running water. Transfer to a large bowl.
  2. Add the remaining ingredients to the bowl of pasta and mix well.
