Oriental-Style Chicken with Toasted Sesame Mashed White Beans
Ingredients
- 2 cups (500 ml) White Bean Purée
- 2 tablespoons (30 ml) butter
- 1 tablespoon (15 ml) toasted sesame oil
- 1 tablespoon (15 ml) lemon juice
- Salt and pepper
- 3 tablespoons (45 ml) finely chopped pistachios
- 2 tablespoons (30 ml) sesame seeds
- 1 teaspoon (5 ml) paprika
- 1 teaspoon (5 ml) onion powder
- 1/2 teaspoon (2.5 ml) ground turmeric
- 1/2 teaspoon (2.5 ml) ground cumin
- 1/2 teaspoon (2.5 ml) ground coriander
- 1/2 teaspoon (2.5 ml) celery salt
- 4 skinless and boneless chicken breast halves
- 2 tablespoons (30 ml) olive oil
- 1 lemon, cut into wedges
Instructions
- In a saucepan, combine all the ingredients. Gently reheat the mashed beans, stirring frequently. Keep warm.
