Ingredients
- 1/3 cup (75 ml) olive oil
- 3 tbsp fresh Parmesan cheese, grated
- 4 garlic cloves, finely chopped
- 2 tsp rosemary, finely chopped
- 1/2 tsp red pepper flakes
- 4 balls pizza dough (by hand)
- 1 cup (250 ml) ricotta cheese, at room temperature
- 2 cups (50 g) arugula or Boston lettuce
- 1/2 lb (225 g) pistachio mortadella, thinly sliced (see note)
- 1/4 cup (35 g) unsalted shelled pistachios, chopped
- 1 lemon, zest finely grated
- Fleur de sel
Instructions
- Preheat the pizza oven on high (3) with the door closed for 20 minutes.
- In a bowl, combine all of the ingredients. Season with salt and pepper.
