Mediterranean Chicken and Grilled Cheese Sandwich
Ingredients
- 4 to 8 slices of bread
- 8 oz (235 g) Doré-mi cheese, cut into 8 slices (or halloumi cheese) (see note)
- Olive oil, for brushing
- 2 cloves garlic, peeled and halved
- 2 plum tomatoes, quartered
- 2 grilled chicken breast halves, thinly sliced
- 2 cups (500 ml) arugula
- Salt and pepper
Instructions
- Preheat the grill, setting the burners to medium. Oil the grate.
- Brush the bread and cheese slices with the oil on both sides.
- Grill the bread and cheese on both sides.
- Rub one side of each bread slice with the garlic. Then rub the same side with a tomato wedge, pressing firmly. Season with salt and pepper. Top with the chicken, grilled cheese, and arugula. Top with another slice of bread for a thick sandwich or serve as an open-faced sandwich.
