Margarita Grilled Fish

Ingredients

  • 1/2 cup (125 ml) lime juice
  • 1/2 cup (125 ml) orange juice
  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons (30 ml) tequila
  • Grated zest of 2 limes
  • Grated zest of 1 orange
  • 1 1/2 pounds (675 g) tilapia fillets or other firm-fleshed white fish
  • Salt and pepper

Instructions

  1. In a dish or large sealable plastic bag, combine all the ingredients. Add the fish and coat well with the marinade. Let marinate for 2 hours. Preheat the grill, setting the burners on high. Oil the grate.
  2. Reduce the heat to medium-high. Grill the fish for 2 to 3 minutes per side, depending on the thickness of the fillets. Serve with a green salad.
