Lentil and Beef Tacos

Take your usual beef tacos and swap half the meat for lentils instead for that extra boost of iron and fiber!

Ingredients

  • 1 onion, finely chopped
  • 1 tbsp (15 ml) vegetable oil
  • ½ lb (225 g) lean ground beef
  • 1 garlic clove, chopped
  • 1 tbsp chili powder
  • ½ tsp ground cumin
  • 1 can (14 oz/398 ml) brown lentils, rinsed and drained
  • ½ cup (125 ml) beef broth
  • 1 tomato, diced
  • 2 tomatoes, diced
  • ¼ cup (10 g) cilantro, finely chopped
  • 1 tbsp (15 ml) lime juice
  • 12 hard taco shells
  • 1 cup (100 g) orange cheddar cheese, grated
  • 2 cups (120 g) iceberg lettuce, thinly sliced
  • Sour cream, to taste

Instructions

  1. In a large skillet over medium-high heat, brown the onion in the oil. Add the ground beef and garlic. Cook breaking the meat up with a wooden spoon until golden. Add the spices and cook for 1 minute while stirring. Add the remaining ingredients and cook until the mixture is almost dry. Season with salt and pepper. Keep warm.
