Warm Lentil Salad with Beer and Mustard Dressing
Ingredients
- 1 egg yolk
- 3 tbsp (45 ml) pale beer
- 2 tbsp (30 ml) whole-grain mustard
- 1 tbsp (15 ml) cider vinegar
- 1/2 cup (125 ml) canola oil
- 2 cups (400 g) baby potatoes, halved or quartered depending on size
- 1 lb (450 g) mild Italian sausage (about 4)
- 2 tbsp (30 ml) canola oil
- 1 lb (450 g) asparagus, trimmed
- 3 cups (750 ml) water
- 1/2 tsp salt
- 1 cup (200 g) dried green lentils, rinsed and drained
- 1 onion, finely chopped
Instructions
- In a bowl, whisk together the egg yolk, beer, mustard and vinegar. Drizzle in the oil, whisking constantly. Season with salt and pepper, then set aside.
