Thermos-Cooked Red Lentil Soup ®
Ingredients
- 1 1/2 cups (375 ml) chicken broth
- 1 cup (250 ml) mixed vegetables of your choice (shredded carrots, diced tomatoes, diced celery, diced zucchini, cauliflower mini florets ...)
- 1/3 cup (65 g) red lentils (see note)
- 1 green onion, finely chopped
- Salt and pepper
- A 2-cup (500 ml) capacity insulated food jar
Instructions
- Preheat the food jar by filling it with boiling water while preparing the soup.
- In a saucepan, bring all the ingredients to a boil. Boil for 1 minute. Season with salt and pepper. Pour into the preheated jar. Close tightly. Do not open for at least 4 hours to allow the food to cook in the hot broth.
