Slow-Cooker Cream of Fava Bean Soup
Ingredients
- 2 carrots, peeled and cut into chunks
- 2 stalks celery, cut into chunks
- 2 onions, quartered
- 2 cloves garlic, peeled
- 1 red apple, cored and cut into wedges
- 8 cups (2 litres) chicken broth
- 1 can 19 oz (540 ml) plum tomatoes
- 1 cup (250 ml) dried fava beans
- 1/3 cup (75 ml) sour cream
- Fresh savory leaves or chopped fresh chives, to taste
Instructions
- In a slow cooker, combine all the ingredients. Cover and cook on low for 8 hours or until the beans are tender.
- In a blender, purée the soup until smooth. Strain, if desired. Season with salt and pepper. Garnish with sour cream and savory leaves.
