Bean, Apple and Fresh Herb Salad
Ingredients
- Grated zest of 1 lemon
- 3 tablespoons (45 ml) lemon juice
- 3 tablespoons (45 ml) olive oil
- 1 tablespoon (15 ml) whole-grain mustard
- 1 tablespoon (15 ml) honey
- Salt and pepper
- 3 cups (750 ml) cauliflower, cut into small florets
- 1 can 19 oz (540 ml) kidney beans, rinsed and drained
- 1 can 19 oz (540 ml) chickpeas, rinsed and drained
- 2 Granny Smith apples, diced
- 1/4 cup (60 ml) raisins
- 2 tablespoons (30 ml) chopped flat-leaf parsley
- 2 tablespoons (30 ml) chopped fresh basil
- 2 tablespoons (30 ml) chopped fresh chives
- 2 tablespoons (30 ml) chopped fresh cilantro
Instructions
- In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.
