Jerky

Ingredients

  • 1 lb (454 g) extra lean beef or chicken breast, cut into 1/8-inch (2-mm) thin slices
  • 1/2 cup (125 ml) red wine
  • 1 medium onion, finely chopped
  • Salt and ground pepper
  • Bouquet garni (thyme, savory, marjoram)
  • 1 clove garlic, crushed
  • 1/2 cup (125 ml) soy or tamari sauce
  • 3 tablespoons (45 ml) maple syrup
  • 1 tablespoon (15 ml) grated ginger
  • 2 cloves garlic, crushed
  • 1/4 teaspoon (1 ml) ground pepper

Instructions

  1. In a bowl, combine all the ingredients and marinate the beef or chicken in the refrigerator for 24 hours, stirring every 6 hours to coat the entire surface of the meat, which turn brown during the process.
  2. Drain. Place the meat slices on baking sheets covered with parchment paper. Pull and smooth each piece on the baking sheet for a uniform and quick dehydration.
