Jerky
Ingredients
- 1 lb (454 g) extra lean beef or chicken breast, cut into 1/8-inch (2-mm) thin slices
- 1/2 cup (125 ml) red wine
- 1 medium onion, finely chopped
- Salt and ground pepper
- Bouquet garni (thyme, savory, marjoram)
- 1 clove garlic, crushed
- 1/2 cup (125 ml) soy or tamari sauce
- 3 tablespoons (45 ml) maple syrup
- 1 tablespoon (15 ml) grated ginger
- 2 cloves garlic, crushed
- 1/4 teaspoon (1 ml) ground pepper
Instructions
- In a bowl, combine all the ingredients and marinate the beef or chicken in the refrigerator for 24 hours, stirring every 6 hours to coat the entire surface of the meat, which turn brown during the process.
- Drain. Place the meat slices on baking sheets covered with parchment paper. Pull and smooth each piece on the baking sheet for a uniform and quick dehydration.
