Jerk Chicken
Channel the Caribbean with this spicy number. Since you precook the drumsticks at home, all they need for the grand finale is a quick flash on the grill for caramelized deliciousness you can eat with your hands.
Ingredients
- 3 habanero peppers, seeded and halved
- 1 shallot, cut into pieces
- 3 green onions, cut into pieces
- 4 garlic cloves, halved
- 3 tbsp brown sugar
- 3 tbsp (45 ml) cider vinegar
- 3 tbsp (45 ml) soy sauce
- 2 tbsp (30 ml) olive oil
- 1 piece ginger, about 1 inch (2.5 cm) thick, coarsely chopped
- 1 tbsp ground allspice
- 1 tsp ground nutmeg
- 1 tsp fresh thyme leaves
- ½ tsp ground cinnamon
- ½ tsp salt
- 12 skinless chicken drumsticks
- 4 cups (1 litre) chicken broth

- In a food processor, purée all of the ingredients until smooth. Set aside.
