Indian-Spiced Chili

This cozy chili recipes infused with Indian-inspired ingredients will be a dinnertime hit with the family.

Ingredients

  • 2 onions, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 tbsp butter
  • 1 lb (450 g) ground beef or pork
  • 3 tbsp curry powder
  • 1 can (28 oz/796 ml) red beans, rinsed and drained
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (14 oz/398 ml) light coconut milk
  • 150 g 1 cup (150 g) frozen green peas, thawed
  • ½ cup (70 g) cherry tomatoes, each cut into 8 pieces
  • ½ cup (15 g) cilantro leaves

Instructions

  1. In a large pot over medium-high heat, soften the vegetables in the butter. Add the ground meat and cook through, breaking it up with a wooden spoon. Add the curry powder and cook for 1 minute, stirring to coat the meat and vegetables.
  2. Add the red beans, diced tomatoes and coconut milk. Mix well. Cover and simmer for 20 minutes, stirring occasionally. Add half of the peas. Season with salt and pepper.
  3. In a bowl, combine the remaining peas with the cherry tomatoes and cilantro.
  4. Serve the chili in bowls. Garnish with the cherry tomato mixture. Serve with naan bread, if desired.
