Grilled Tofu Sandwiches
Ingredients
- 3 chipotle peppers in adobo sauce, finely chopped (see note)
- 3 tbsp (45 ml) olive oil
- 1 tbsp (15 ml) honey
- 1 lime, zest finely grated
- 1 tbsp (15 ml) lime juice
- o 1 lb (450 g) firm tofu, cut into 8 slices
- 3 cups (180 g) iceberg lettuce, thinly sliced
- 8 radishes, grated
- 2 green onions, chopped
- 1/4 cup (10 g) cilantro, finely chopped
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp (15 ml) lime juice
- 4 hamburger buns or other buns
- 1 tomato, cut into 4 slices
Instructions
- In a glass dish, combine the peppers, oil, honey, lime zest and juice. Add the tofu and coat well in the marinade. Cover. Let marinate for 15 minutes. Drain the tofu and set the marinade aside.
- Preheat the grill, setting the burners to high. Oil the grate.
- Grill the tofu for 2 minutes on each side. Toast the buns, if desired. Keep warm.
