Grilled Flap Steak with Orange-Curry Yogurt Marinade

Ingredients

  • ½ cup (125 ml) 11% yogurt
  • 1/3 cup (75 ml) orange juice
  • 2 tbsp (30 ml) honey
  • 2 tbsp (30 ml) honey 2 tbsp (30 ml) harissa
  • 2 tsp curry powder
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • 1 ½ lb (675 g) beef flap steak (bavette), cut into 4 pieces
  • 2 small red onions, cut into rounds ½ inch (1 cm) thick
  • 2 tbsp (30 ml) olive oil
  • 1 tsp (5 ml) red or white wine vinegar
  • 4 small zucchini, cut in half lengthwise
  • 4 naan breads
  • ¼ cup (10 g) cilantro, finely chopped

Instructions

  1. In a large bowl, whisk together all of the ingredients except for the steaks. Season with salt and pepper. Set aside half of the sauce in a small bowl. Cover and refrigerate until ready to serve.
  2. Add the steaks to the bowl of remaining sauce and toss to coat well. Cover and let marinate for 8 hours in the refrigerator.
