Grilled Chicken Cutlets with Tomato Sauce and Melted Mozzarella
Ingredients
- 4 boneless, skinless chicken breasts, halved horizontally
- 1 tsp ground fennel seeds
- 1 tsp red pepper flakes
- ¾ cup (180 ml) homemade or store-bought tomato sauce
- 1 ball fresh mozzarella cheese (250 g), cut into pieces (see note)
- 16 olives, pitted and coarsely chopped
- ¼ cup (10 g) basil leaves
Instructions
- Preheat the grill, setting the burners to high. Oil the grate.
- On a large plate, sprinkle the chicken with the ground fennel and red pepper flakes. Season with salt and pepper. Lightly oil the chicken.
- Grill the chicken for 4 minutes on one side. Flip the meat over. Cover with the tomato sauce, cheese and olives. Grill for another 4 minutes or until the chicken is cooked through and the cheese is melted. Remove from the heat. Garnish with the basil.
- Serve with buttered pasta or a green salad, if desired.
