Grilled Beef with Sumac

Ingredients

  • 1/4 cup (60 ml) olive oil, plus more for cooking
  • 1 tbsp ground sumac
  • 1 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 2 garlic cloves, coarsely chopped
  • 1 1/2 lb (675 g) beef chuck (shoulder) or flap steak (bavette)
  • 1 lemon, cut into wedges

Instructions

  1. In a glass dish, combine all of the ingredients except for the beef and lemon. Add the beef and toss to coat well with the marinade. Cover and let marinate in the refrigerator for 1 hour or up to 2 days.
  2. Preheat the grill, setting the burners to high. Oil the grate.
  3. Grill the meat for 3 minutes on each side, depending on the thickness or until the desired doneness. At the same time, grill the lemon wedges. Set the meat aside on a plate. Cover and let rest for 5 minutes.
  4. On a work surface, slice the meat against the grain. Serve with the grilled lemon wedges and asparagus and zucchini salad, if desired.
