Greek-Style Chicken Stir-Fry
Ingredients
- 1 1/2 cups (375 ml) chicken broth
- 1 tablespoon (15 ml) butter
- 1 1/2 cups (375 ml) couscous
- Salt and pepper
- 1 onion, thinly sliced
- 3 tablespoons (45 ml) olive oil
- 4 skinless, boneless chicken breasts, cut into strips
- 1/4 cup (60 ml) oil-packed kalamata olives, drained, pitted and very finely chopped
- 2 cloves garlic, finely chopped
- 1 can (540 ml/19 oz) diced tomatoes, drained
- 1 teaspoon (5 ml) dried oregano
- 3 tablespoons (45 ml) chopped fresh basil
- Salt and pepper
Instructions
- In a small saucepan, bring the broth to a boil with the butter. Season with salt and pepper.
- Remove from the heat and add the couscous. Cover and let stand for 5 minutes. Fluff with a fork.
