Foie Gras Roasted Chicken
Ingredients
- 125 ml (1/2 cup) duck fat or butter, softened
- 115 g (1/4 lb) foie gras torchon, at room temperature (see recipe or store-bought)
- 1 chicken, about 2 kg (4 1/2 lb)
- 15 ml (1 tbsp) breadcrumbs
- Salt and pepper
- 125 ml (1/2 cup) chicken broth
- 60 ml (1/4 cup) ice wine or Sauternes
- 30 ml (2 tbsp) flour
