Foie Gras Roasted Chicken

Ingredients

  • 125 ml (1/2 cup) duck fat or butter, softened
  • 115 g (1/4 lb) foie gras torchon, at room temperature (see recipe or store-bought)
  • 1 chicken, about 2 kg (4 1/2 lb)
  • 15 ml (1 tbsp) breadcrumbs
  • Salt and pepper
  • 125 ml (1/2 cup) chicken broth
  • 60 ml (1/4 cup) ice wine or Sauternes
  • 30 ml (2 tbsp) flour

Instructions

  1. Line a baking sheet with parchment paper.
