Fish Kefta with Garlic Sauce
During the warm season, everyone tends to gravitate towards skewers. Easy to cook, they’re a hit with both kids and adults. If you’re looking for something different for your next barbecue, try this recipe consisting of white fish, cilantro and sumac. It’s a Middle Eastern-inspired recipe that pairs wonderfully with garlic sauce.
Ingredients
- 1 egg
- 1/2 garlic clove, halved
- 1 tbsp (15 ml) lemon juice
- 1/4 tsp salt
- 1 pinch cayenne pepper
- 1/4 cup (60 ml) vegetable oil
- 1/4 cup (60 ml) olive oil
- 1 egg
- 1/4 cup (20 g) panko breadcrumbs
- 3/4 lb (340 g) fresh hake or haddock fillets, cubed (see note)
- 1/4 cup (10 g) cilantro, finely chopped
- 1 green onion, chopped
- 1/2 tsp ground fennel seeds
- 1/2 tsp salt
- 1 tsp ground sumac
- 1 lemon, cut into wedges
Instructions
- In a tall, narrow container (such as a measuring cup), place the egg, garlic, lemon juice, salt and cayenne. Using a hand blender, purée the ingredients until smooth. With the machine running, slowly drizzle in the vegetable oil. In less than 1 minute, the mixture will resemble mayonnaise. With the machine still running, drizzle in the olive oil. Transfer the sauce to a small serving bowl. Refrigerate until ready to serve.
