Shrimp Toast
Popular in Asia, Hong Kong-style shrimp toasts are a delicacy of fusion cuisine. The recipe consists of a shrimp filling enhanced with herbs and condiments, which is then spread on slices of bread. A layer of sesame seeds covers the shrimp, adding a crunchy texture to the fried toasts. They’re sure to be a hit!
Ingredients
- 1/4 cup (10 g) cilantro stems and leaves
- 1 green onion, cut into pieces
- 1 garlic clove, halved
- 6 oz (170 g) shelled shrimp, thawed and patted very dry (see note)
- 1 egg
- 2 tsp (10 ml) low-sodium soy sauce
- 1 tsp (5 ml) sambal oelek
- 1/3 cup (50 g) sesame seeds (see note)
- 4 slices sandwich bread
- 3/4 cup (180 ml) vegetable oil, for cooking
Instructions
- In a food processor, chop the cilantro, green onion and garlic. Add the shrimp, egg, soy sauce and sambal. Blend until coarsely puréed. Season with salt and pepper. Using a spatula, scrape down the sides of the food processor as needed.
- Place the sesame seeds in a shallow bowl.
- On a work surface (see note), spread the shrimp purée over the bread, using about 1/4 cup (60 ml) per slice. Working with one slice of bread at a time, press shrimp-side down into the sesame seeds. On the work surface, cut each slice of bread into 4 triangles.
- In a large non-stick skillet over medium heat, warm the oil for 5 minutes. Brown half of the bread triangles at a time in the oil, sesame-side down, for 3 to 4 minutes. Flip over and continue to cook until the bread is golden, about 1 minute. Drain on a plate lined with paper towels. Serve with store-bought sweet chili sauce, if desired.
