Ingredients

  • 1 1/4 cups (175 g) graham cracker crumbs
  • 1/3 cup (75 g) unsalted butter, melted
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp gelatin
  • 1/3 cup (75 ml) cold water
  • 1 3/4 cups (250 g) frozen sea buckthorn berries (see note)
  • 1/3 cup (70 g) sugar
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup (55 g) cold unsalted butter, diced
  • 1 tsp cornstarch
  • 1 tbsp (15 ml) cold water
  • 2 egg whites, at room temperature
  • 1/3 cup (70 g) sugar

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. In a bowl, combine all of the ingredients. Press the crust along the bottom and up the sides of a 9-inch (23 cm) glass pie dish. Bake for 15 minutes. Let cool.
