Ingredients
- 1 1/2 cups (225 g) unbleached all-purpose flour
- 1 1/2 cups (150 g) quick-cooking oats
- 1/2 tsp baking soda
- 1 pinch salt
- 1/2 cup (115 g) unsalted butter, softened
- 3/4 cup (160 g) brown sugar
- 1 egg
- 2 cups (370 g) ripe plums, pitted and diced (about 6 plums) (see notes)
- 1/2 cup (105 g) sugar
- 2 tsp cornstarch
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Butter an 11 x 8-inch (28 x 20 cm) glass baking dish and line with a strip of parchment paper, letting it hang over all four sides.
- In a bowl, combine the flour, oats, baking soda and salt.
- In another bowl, cream the butter and brown sugar with an electric mixer. Add the egg and mix until smooth. Using a wooden spoon, stir in the dry ingredients. Spread two-thirds of the dough along the bottom of the prepared dish, pushing it slightly up the sides of the dish.
- In a third bowl, combine the plums, sugar and cornstarch. Spread over the dough in the baking dish. Coarsely crumble the remaining dough over the fruit.
- Bake for 45 minutes or until the dough is nicely browned. Let cool for 15 minutes before unmoulding. Cut into squares.
