Pavlovas with Passion Fruit Crémeux, Pineapple, Coconut and Basil

In this pavlova recipe, the little meringue nest is garnished with fruit full of sunshine, coconut and basil whipped cream, for a surprising and delicious blend of flavours.

Ingredients

  • 1/2 cup (125 ml) 35% whipping cream
  • 1/4 cup (10 g) basil leaves, finely chopped
  • 1 1/2 tsp cornstarch
  • 1 1/2 tsp (7.5 ml) lime juice
  • 3 egg whites, at room temperature
  • 3/4 cup (160 g) sugar
  • 1/4 cup (55 g) sugar
  • 3 egg yolks
  • 1/3 cup (75 ml) passion fruit juice (see note)
  • 2 tbsp unsalted butter
  • 1/2 cup (125 ml) mascarpone cheese
  • 2 tbsp sugar
  • 1/2 cup (95 g) pineapple, cut into small dice
  • 1 lime, zest finely grated
  • Toasted coconut shavings, for decoration
  • Small basil leaves, for decoration

Instructions

  1. In a bowl, combine the cream and basil. Cover and let infuse in the refrigerator for 8 hours or overnight.
