Old-Fashioned Glazed Doughnuts (The Best)

Ingredients

  • 3 cups (450 g) unbleached all-purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (250 ml) milk
  • 1 cup (210 g) sugar
  • 1/3 cup (75 g) unsalted butter, diced
  • 1 tsp (5 ml) vanilla
  • 2 eggs
  • Vegetable oil, for frying
  • 2 cups (260 g) icing sugar
  • 2/3 cup (150 ml) maple syrup
  • 1/3 cup (75 ml) milk
  • 1 tsp ground cinnamon (optional)

Instructions

  1. In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, baking powder and salt. Set aside.
  2. In a small pot, bring the milk, sugar, butter and vanilla to a boil.
  3. Add the eggs to the bowl of dry ingredients. With the machine running on low speed, gradually pour in the hot milk mixture. Mix for 30 seconds or until the dough is smooth and sticky. Transfer the dough into a large glass dish and spread out in a thin layer. Cover with plastic wrap. Refrigerate for 1 hour or until the dough is firm and chilled.
  4. Preheat the oil in a deep fryer to 350°F (180°C). Line a baking sheet with a wire rack.
